is there any tutorial to rebuild or build new AR application using another image target, from first step to final steps ?

Hi, we don't have such tutorial, but you can look at this article, which may help:

so how can i understand and start to build an application, i don't even know application structure..

Your best bet is to study a bit the Image Targets sample code, and try to understand it.

Also, I recommend to consult our developer guide, which covers a wide variety of topics, from "creating image targets" to integrating Vuforia:
