We
have built Unity/Vuforia apps and have side-loaded them to our Apple devices in developer mode, but are now interested in publishing to the App store.
How long does it take between submitting a Unity/Vuforia app to Apple and it being approved / being available for download in the App Store?
Are there likely issues in getting the App approved by Apple / is it a convoluted process, things to look out for?
How quickly can you release updates and they appear in the App Store?
Any other considerations/observations?

Only a couple big things to consider that are Vuforia specific and that's two bugs that are being worked on right now.

Anything else is pretty general info about the App Store process that can be found with a quick google search.
Review time is usually 1-2 days. Being rejected the first time for a new app or new developer is somewhat common (they're being overly cautious, they'll tell you why it's rejected), but app updates seems less strict and usually pass through pretty easily. I wouldn't submit an app that juts has a camera view and that's it, make sure you have some other UI to go along with it. The person reviewing the app might throw it into the "useless" category and reject. They usually ask for a video demonstrating the AR, I don't think the reviewers go through the trouble of testing the AR even if you include a pdf of your image targets.
