I can't find a button to import an optimized, overworked version of the 3D model into your vup. Do have to create a new project / target each time you optimize the model?

If the source model, the one that you originally selected when creating a Model Target project, is modified and thus gets a new time stamp, the Model Target Generator should automatically sync to the newer version. The re-import is triggered when you re-open the project.
