It looks like Vuforia is returning a byte feed that is not just the simple widthxheight of the screen resolution... Is there a virtual screen resolution or another resolution that is being used?

Basically it depends on the camera feed. On iOS it is typically 480*360.

In Unity you can reach this setting in the Inspector panel by clicking on the ARCamera in the hierarchy and then it should be under QCAR Behaviour under Camera Device Mode Settings.
