After upgrading to 2.0.32 due to the UDID restrictions on Apple's behalf, we seem to be running into issues with loading data sets.
As a test, I downloaded your sample UDT scene, upgraded it to the latest version of Vuforia (just in case), and added an image data set. Upon activating it, Unity will crash like clockwork when spotting the image target...as it also will running on iOS. This has been tested on two different macs with identical results.
We're running Unity Pro 4.1.3f3 on the latest Mountain Lion.

Any resolve/hack is much appreciated, as we're running short on time.

the issue resulting from the combined UDT and Image Targets has been resolved in the latest 2.5.8 SDK release, which is now available here:
