Hello,
I tried to not add the arcore.aar plugin in the Unity editor Plugins > Android folder, but I still got that Vuforia was using the PLATFORM_SENSOR_FUSION as the provider.
Moreover, I didn't noticed any considerable changes after adding the .aar plugin.
How do this plugin is used? And is it really necessary?

This will depend upon the device you're using.
Vuforia Fusion will provide the best platform CV solution. First, it will check if ARCore is installed and if the device supports it:

The AAR is used to allow the app to connect to the ARCore service on the device (if available). It also contains the functionality to download ARCore - after user consent - to install the service at run time of the app.
